Lion’s mane is an adaptogen – helping the body respond to stress. So what better way to support the body than with chocolate! This recipe is minimally processed and contains clean ingredients so you can enjoy this treat guilt free.
Ingredients:
- Base:
- 125g cashews
- 1/2tbsp mushrooms 4 life lions mane powder
- 75g pitted dates
- Caramel:
- 150g pitted dates
- 75g smooth almond butter
- 60g coconut oil
- 45ml water
- Chocolate
- 150g dark chocolate (we use Alter Eco 70%)
- 2tbsp coconut oil
- 1/2tsp mushrooms 4 life lions mane powder
Instructions:
Base:
- Blitz cashews until a flour consistency is formed
- Add remaining ingredients and combine until a dough is formed
- Line a baking tin with baking paper and press in the mixture
Caramel:
- Add all caramel ingredients into the blender and blend until a caramel consistency is formed (add more water to loosen if needed)
- Spread the caramel layer over the base
Chocolate:
- Melt the chocolate and coconut oil following a method of choice
- Pour chocolate over caramel layer
- Transfer to fridge to set for around 2 hours (or into freezer for quicker results)
