We love this all natural, home-made, elderberry tea. It’s the perfect alcohol-free winter warmer that not only tastes delicious but supports your immune system too.
Whether this tea is for yourself or to impress your festive guests it’s not one to be missed! Created by one of our fabulous chef’s, Rebekkah, it’s made with elderberries, ginger, honey and a hint of chilli. Check out the recipe below.

Why we love it…
Our elderberry cordial recipe is a double whammy! When you’re feeling a bit under the weather a tablespoon of cordial every 3-4 hours can help blast away a cold! Any other time, simply dilute with hot water and voilà – warming Elderberry Tea! Of course we’ve all tasted it and it’s perfect as an alcohol-free mulled wine
Recipe
Ingredients:
- 1 cup dried elderberries
- 4 cups water
- 1 cinnamon stick
- 2 star anise
- 5-10 cm ginger
- 1 cup raw honey / maple syrup
- 1 small chilli pepper

Instructions
In a large pot throw in all the ingredients (save the honey/maple syrup until the end!) and slowly bring to a boil. Let that bubble away for about an hour to reduce down.

Once reduced take it off the heat and use either a sieve or cheesecloth to strain into a bowl. Squidge those berries to get out as much juice as possible before popping the rest of the gubbins into your compost bin!
Once the liquid has cooled a little you can add your honey, or maple syrup as a vegan alternative. Keep stirring until your sweetener of choice is fully dissolved and mixed in. It’s as simple as that!



Storage
Store your elderberry cordial in an old jar or bottle, sealed tightly for optimal freshness! Pop that in the fridge and it should last 2-3 weeks – if it hangs around that long!
How do I use my home-made elderberry cordial?
When you’re ready for a cup of warm festiveness, simply dilute with hot water and voilà – warming Elderberry Tea! The ratio of cordial to water is entirely up to your taste buds, start off like you’re making a glass of squash and give it a taste test.
You can also drink it just like cordial with still or sparkling water, failing that it’s a fabulous addition to cocktails for the party season.
